Two Ingredient Pumpkin Muffins

These two ingredient muffins were amazing. I was very close to GOURDging on them all night, but luckily I had a few people stop by my place to taste test.  I will note that as I write this post I am eating one for breakfast and it is just as delicious as it was out of the oven. Ok, maybe not JUST AS delicious, but close enough. Way better than store bought or even Starbucks or DD.

You can definitely taste the pumpkin and the aromas will overpower your dwelling. Highly recommend to make if you have anyone coming over. 🙂

I also whipped up some cream cheese frosting, but they didn’t need it. Although it would be good if you wanted it to be more of a cupcake than a muffin.

Also, 1 added 2 eggs to the recipe. The cake and the pumpkin just didn’t mix as well since it was so dry.

Pumpkin Spice Dump Cake

I made this cake last week and got a lot of positive reviews even from non-obsessed pumpkin people. Name aside, it.is.delicous. It is a hybrid of pumpkin pie and a crumble/streusel cake. Absolutely amazing. The fall flavors melt in your mouth.

Not only was it a pleaser, it was a pleasure making it. Why? Because it was only 4 ingredients! Super easy and topping it with real vanilla bean ice cream made it even better.

I highly recommend you make this over the fall, bring it to a football party, or friendsgiving. I will be making for Thanksgiving this year.
